Easy Mexican Chicken Tostadas with El Yucateco Habanero & Coffee Sauce
Ingredients
For the chicken: 500g boneless and skinless chicken thighs, chopped into pieces 1 tablespoon olive oil 1 teaspoon ground cumin 1 teaspoon smoked paprika 1 teaspoon garlic powder Salt and pepper to taste For the El Yucateco Habanero & Coffee Sauce: 120 ml El Yucateco Habanero & Coffee Sauce 2 tablespoons tomato puree 1 tablespoon honey Juice of 1 lime Salt to taste For the Tostadas: 8 small tostada shells 1 cup refined beans 1 cup shredded lettuce 1 cup diced tomatoes 1/2 cup diced red onion 1/2 cup sliced black olives 1/2 cup crumbled queso fresco or feta Fresh cilantro leaves for garnish

Instructions
Cook the chicken:
Heat olive oil in a pan over medium-high heat. Add shredded chicken, ground cumin, smoked paprika, garlic powder, salt and pepper. Fry until chicken is fully cooked and a nice golden brown color. Set aside.
Prepare the El Yucateco Habanero & Coffee Sauce:
In a bowl, mix the El Yucateco Habanero & Coffee Sauce, tomato paste, honey, lime juice and salt. Stir well to combine.
Assemble the Tostadas:
Spread a layer of baked beans on each tostada shell. Top with the cooked and seasoned shredded chicken.
Add toppings:
Drizzle the El Yucateco Habanero & Coffee Sauce over the chicken. Add shredded lettuce, diced tomatoes, diced red onion, sliced black olives and crumbled queso fresco or feta.
Garnish and serve:
Garnish the tostadas with fresh cilantro leaves. Serve with wedges of lime alongside to squeeze over the tostadas.
